My premed comittee won’t interview me until August, though they interviewed other people this past week. I am a weaker candidate academically 3.24 cgpa 3.27sgpa 509 mcat. Will a mid To late August letter really hurt my chances? Assuming all my secondaries are finished.
 
With your stats ideally you would want to be finished asap and complete around July to maximize your chances. So yes, it will not be helping you.

I already told them August was fine. Should I email her back and ask for it to be moved up?

Definitely doesn't hurt to ask. I would try to get it moved as early as possible and also try to get it in on your application asap.

Also, if you don't mind be asking are you URM?

Ideally, yes, you would want to be finished as early as possible, but having everything in (including secondaries) by mid August is still considered early.

In that case I think I’ll spare myself the embarrassment and potential to aggravate them and just go along with it.

I don’t think it’s too embarrassing to just e-mail and ask? If they are willing to move it, then that’s great!

She asked me already if August was too late and I emailed back after some checking saying it was fine after I Initially raised the point. I feel like if I go back again and say no that’s not alright I might piss off the comittee for not getting it strait.

It won't be a big deal to just ask. Social insecurities affect all of us but, if you just think about it, you wouldn't mind either if someone asked "hey, would you consider moving the date up?".

The worst they can say is "no", it won't be awkward, embarassing, or disrespectful. Good luck this cycle!

P-edit: Even so, leading with "hey, I thought about it and I'd like to submit earlier if at all possible" would not be a bother.

I know people that applied extremely late and got in. Some of them even to top tier medical schools. I submitted the last bit of my application in October 2016. And got 6 interviews before January.
 
That’s so bizarre. My undergrad, pre-health committee made sure to have interviews and letters complete well before July.
Fortunately, you don’t need to have your letter complete before your application can be verified.
