If my statistics course is under the Educational Psychology “department,” do I put it under “Math” or “Psychology” in PTCAS?

Also, in the PTCAS website, they mention that we should match one course for each core PT prerequisite, how does that work if the majority of the schools I want to apply to require 2-3 psychology courses? For example, I’ve taken Survey of Psychology, Abnormal Psychology, and Developmental Psychology. Would I be allowed to select all three or just the most “introductory level” as mentioned in the PTCAS?

Put the stats class under "math". The PTCAS instructions are quite clear on what classes should go in what category.

Match your intro psyche class to the psyche pre-req designation. Each school calculates it's own pre-req GPA based on the classes they specifically care about. PTCAS will only allow you to match one class to each core pre-req. You already asked this question in another thread a couple of months ago.
