Question ABout letter of recommendation

I want to get a letter of recommendation from one of my professor who doesn't teach at my college anymore, but she is willing to write a LOR for me. So, my question is that, can I use her LOR for OAT schools, because her LOR won't be printed with my college paper (School Letterhead). However, she will mention which college I went to and what she taught in the LOR. Is there anything specifically i should tell when she writes the letter? I'm just confused😕.

Also, will a LOR from psychology or anthropology professor count as a science LOR. Thanks for the help.
