Question regarding LORs.

I have a friend who has been out of school for 5-6 years now and does not have many professors that he can ask for LORs from.

He still needs to take some science classes(orgo and physics), but due to his work schedule, he thinks he may need to take those science classes online through UNECOM or another program. Not really sure what he should do regarding his LOR situation.

Questions:
How many LORs should he be aiming for?
Can he use a LOR from his employer/boss?
Should he just try to at least take one of his pre-reqs in class somehow over the spring/summer, possibly to get at least one LOR?
He plans to also get a LOR from shadowing.

Thanks Goro. It seems like a bunch of schools only require 1 science/pre-health committee letter, but then some schools require up to 2 or 3 LOR from professors.
 
Some schools have allowed an employer to replace a non-science LOR in certain circumstances (graduated >5 years ago).

Talk with admissions at specific schools you want to apply to.
