I am contracted at my hospital until next April as an RN. I am trying to complete my prereqs and supplemental courses to improve my MCAT ability as soon as possible to keep costs lower and get in me school faster, however I don't want to cause my grades to suffer.

I am currently studying courses ahead of time to facilitate easier learning. This is my planned course timeline
Summer 2019 GChem 1+2 (8 hours)

Fall 2019 O chem 1+Physics 1 (8 hours)

spring 2020 Ochem 2+Physics 2 (8 hours)

summer 2020 bio chem + principles of genetics (7 hours)

fall 2020 cell bio + biochem 2 (6 hours)

Total 34 hours

Spring 2021 Prepare for MCAT/Take MCAT/Apply for year

Any recommendations on:
*More classes to perform well on MCAT
*Better structuring of schedule (More or less classes per semester based on course difficulty)
*Anything else you can think of
 
I think you have things lined up very nicely! You don't NEED cell bio but im sure it will aid with some low yield MCAT questions.
Good point to brush u on your basic algebra skills as this will make your like x1000 easier for gen chem and physics especially.
For orgo definitely get David kleins "Organic chemistry a second language" semester one and two (both books.) Carry it like your bible and you will laugh/ love ochem.
 
As for classes for the MCAT the prereqs plus biochem are obviously key.
Genetics I didn't take before the MCAT but I can see its usefulness.
Things like Cell bio, Immunology etc. are going to be classes in which 1/100 things you learn involve material for the MCAT and can better be self studied.
Basic psych/socio are helpful and easy classes but can also be self studied.
Anatomy/ physiology may arguably be higher yield than cell bio but opinions will vary.
