I'm sure there's a difference in training between the two; how big is that gap? What kind of limitations would one face by going to a level 2 center and how would it affect fellowship applications?

Depends on the experience and reputation of the program. Some programs with a limited trauma experience will also supplement by sending residents to a busy major trauma center for a rotation.
