How exactly should one approach a doctor for shadowing experience? Does one have to be in medical school, or just pre-medical will work? Should one just ask 'I was wondering if I could shadow you during your work, to see if I like the field?'

You do not have to be a medical student to shadow. Most every applicant has had a shadowing experience. It is a very helpful activity that shows you a "day in the life" of a physician. It all depends on how you want to go about it. You could either cold call, make connections through volunteer experiences, or if you know someone in the field have them ask around. I think you should definatly shadow, it will let you know what you are getting into.
 
ok, considering I know people in the field/people who know people in the field, could i just straitup ask (email) 'I was wondering if I could shadow you, or if you knew someone who is willing to allow a student to shadow him/her?'

I don't see why not. They all know you have to start somewhere. So ask away.
