So how do you show proof that you did all the extracurriculars like volunteering and shadowing? Do you ask them to write a letter telling the school you did? Or what?

Often you will want to get a LOR from the doctors you volunteer/shadow with, because they often know you better than your big lecture profs and may have observed your work. Otherwise you just list it in AMCAS (or your PS) -- it's very checkable by med schools, should they be so inclined, so they don't really require written "proof".
 
i second law2doc, but also on the amcas app there should be a place to list your contacts for each activity. this is where you put in the person's name and phone number, to facilitate verification by amcas.
 
I doubt they verify this stuff very often, so a lot of the time, it's just based on honesty.
 
They'll ask in interviews, so you better have some stories to tell!
 
No one ever asked me questions to vet my activities list during interviews. AMCAS doesn't ask for phone numbers of contacts. I think they just take your word for it. However, if you are feeling really paranoid, ask your supervisor for a certificate of recognition or letter attesting to your service.
