If the the topic of my AMCAS personal statement discussed this, should I talk about another experience? I spent 6 weeks in abroad doing medical stuff that was not given justice in the AMCAS extracurriculars because I had just arrived oversees. Would ADCOMs prefer for me to talk about something new (and in my opinion interesting)? Conversely, would they see that as not following directions?

I assume you are referring to secondary essays. The purpose of these essays is to give the adcomm insight into your personality. Since you had barely arrived overseas when you submitted your personal statement, I'm sure you might, since, have had an amazing experience that would make a great essay. It would be fine to write about this, as it would be completely new information. Or, you can choose another topic, related to another volunteer opportunity you participated in. It doesn't matter. But be sure a new insight into your personality is being provided by whatever you write about.
