Studying for the MCAT:Emulating CBT Format using Prep Books

I am taking the MCAT CBT at the end of this summer. I have been using the Examkrackers MCAT Complete Study Package, and I recently purchased the Examkrackers 1001 Questions books and the Examkrackers 101 Passages in MCAT Verbal Reasoning book.

The way I have been trying to replicate what threads have said the actual CBT is by answering the questions within EK's lectures and lecture exams on my laptop using spreadsheets. I have not written in my prep books when I practiced, but I recently found out that the MCAT CBT allows one to strike through answers, underline, and mark questions.
During past paper standardized tests, I usually wrote little notes to myself in the margins. From my searches on SDN, no one has mentioned typing in little text boxes on the side of the passages or note taking of any kind.

Anyway, my questions are these:

(1) During the real MCAT CBT, I know either a dry erase board or packet of scratch paper is provided. Is this available during the entire test or just during certain sections (e.g. Physical Sciences)?

If it is, I plan to practice by reading and underlining the passages, while writing my notes on a dry erase board or scratch paper, then typing my answers in my spread sheet. Does this sound like a reasonable way to study?

(2) I think this question may have been asked in another thread, but do all the test takers start, take breaks, and finish the exam at the same time? I know that the exam lasts 5.5 hours, but I just saw a thread today with someone saying he or she didn't want to be on the Biological Sciences sections while everyone else was on the Writing Section. I don't think that person had taken the real CBT yet, so I just wanted to verify this.

(3)Can test takers underline the question stems and not just the passages???
