This might be a really stupid question, but here it goes...

Are there any doctors who manage to take summers off or who only work one or two days a week over the summer? For example, I know many children's weight loss camps have a pediatrician on their staff. What do these doctors do during the year that allows them to work at a summer camp over the summer?

From my admittedly naive perspective, it seems like a doctor with his or her own practice would be able to do something like this. Also, perhaps doctors who work in university/student medical clinics have some time over the summer.

Anybody know anything about this?

Medicine is such a diverse field that I am sure it is possible in most fields. However, some fields are going to be more open to it than others.

As you said in private practice you can do what you want but you would probably want to have a partner(s) who is willing to cover your patients while you are away as it will be difficult to have a successful practice if the entire practice shuts down in the summer.

In other settings you will just have to find a program that is willing to accommodate your schedule. Obviously, you may have sacrifice other things as it will narrow the number of job opportunities but if it is important I think it is doable.
