Any suggestions? Apart from a simple thank you note or card... Is anything else really necessary? Gift card? Flowers? I thought that would be tacky but I'd love to know what everyone thinks!

I personally gave thank-you cards to the PT's who allowed me to observe in their clinics. Don't buy anything. That's unnecessary. Just show gratitude.

Drop them a note after you've started PT school. I write to them once a year and give them short updates. Consider it part of networking.

I did gift cards (only like $10) to their favorite restaurants, or ones I thought they might like to eat at/try.
 
I bought and gave out t-shirts and mugs from the school I plan on attending along with a hand written thank you note. Each of them loved it! :)
 
Chicken nuggets are a must. Don't forget ketchup. And more nuggets.
