At 5AM EST while reading through Chapter 1 of CliffsAP, I realized that the Triglycerides (triacylglycerols) structure on page 16 didn't make sense. Triglycerides (triacylglycerols) are supposedly a glycerol with 3 fatty acids and a fatty acid is made of a hydrocarbon chain and carboxyl group. Then where's the C to the left of the carbonyl coming from?

I've done some Google searches and it looks like that C isn't supposed to be there. It's officially 8:26AM, and I don't think I'm crazy now. The book might just be wrong.

How wrong am I here?

Yes. You are correct, there should not be any carbon to the left of the carbonyl.
When a fatty acid binds to the glycerol, estr ond is formed. This was not an ester bond.
Good catch.
