I always struggle with my humanities classes since most rely heavily on essays. No matter how hard I try, I always end up with a B on papers and B's in the classes. Will this be a problem in the eyes of adcoms? I have a high sGPA, but I cannot get an A in a humanities class if my life depended on it.

One B won't kill you. Ask your professor what you can do better to improve your writing in order to get an A.

I already have two B's from freshman year and about to get another this semester, so there's no time to improve my writing

What's wrong with your papers? What criticisms do your professors make? And what have you done to address those criticisms?

Stop taking those classes.
My school requires it unfortunately. I may try to take anthro classes or something with exams instead of papers next year though.

Most of the time they say that my writing is not focused enough. The problem is that I haven't been able to put all my effort into fixing it since I didn't want my grades in science classes to drop as well.

If I ever got a B on the first paper of a semester, I would go to the professor/TA/whoever is grading's office hours before the next one. If you have an idea for your topic/thesis, you can probably run it by them and see if they think it is focused enough or if you should narrow it down. If you show some initiative, they will probably be more inclined to give you better grades as the semester progresses. That might be enough to push you from the B to the A-/A, but if you think you are a weak writer, you should definitely utilize your school's writing center.

It sounds like your essays may be all over the place. How much effort does it take to gather your thoughts and focus the structure of your essay?

Writing and is an important skill, not just for getting better grades, but overall. Good writing requires focus and an ability to communicate ideas clearly. Improving your writing skills will not only improve your grades in your humanities classes, but will translate to other classes as well.
