Two things:

Are there lab classes in med school? ones that are as grueling and general/organic chemistry where you need to perform experiments and have a separate grade?

When applying to the SMP, do you have to be a sciences major? What if you are an econ major, with a bio minor?

Applying to a SMP should be pretty similar to Med School (though less intensive). And by that I mean you can have whatever major you choose as long as you have completed the Pre-Reqs.

I can not answer your first question.
 
There are no labs like you're thinking. No experiments in med school. There is anatomy lab in which you dissect cadaveurs. The lab grade is lumped in with the written portion, so you only get one grade for the class. Often instead of "lab" you have small group sessions, like physio for example, where you do problem based learning exercises.
