Back in August I got a 514 but it was a 130/125/131/128. I'm concerned that my low CARS will put my chances in jeopardy and I'm wondering whether or not it's worth retaking and risking a lower score.

I have a 3.75 gpa, research, publication, etc.

Take my advice for what its worth, but unless you're Canadian, I wouldn't risk a retake. Even though your CARS is a little low, everything else looks great. I could be wrong , but I think an 8 is the verbal section cutoff for some places, and I think 125 is ~8.
