Not a Texas resident so not considering those schools and prefer schools closer to the east coast. Here are some of the ones I’ve been thinking about. Let me know if I’m shooting too high/what schools I have a decent chance at? Suggestions for schools I haven't listed here?

What is your state of residence? What state did you grow up?

80 hours non medical volunteering (mentoring elementary students)
What other community service do you have? Teaching/tutoring/mentoring are academic competencies. Leading an advocacy initiative is leadership - advocacy.

I'm afraid I don't really have community service, I can start now and aim for about 60 hours?

You need 150 hours of service orientation to avoid getting screened out by most schools: food distribution, shelter volunteer, job/tax preparation, legal support, transportation services, or housing rehabilitation. Having zero hours puts your application at serious risk of getting screened out unless you articulate a very strong mission fit.

Practically every premed applicant has teaching, tutoring, or mentoring. Such activities do not help you stand out. (The students you serve who are under-resourced are helpful, but underserved populations go under a different category for me.)

I suggest these schools with your stats:
