MD/DO either one, as long as I get to be a doctor. Also "locationally" flexible. Should I apply OOS? Caribbeans? Am I a long shot for TX schools?

Apply to all of your Texas schools and you should receive some interviews. For OOS MD schools you could try the newer schools:
Quinnipiac
Oakland Beaumont
Seton Hall
NOVA MD
California University
any new schools that may open for 2019 (Kaiser, Roseman)
You are competitive for all DO schools with your stats so apply to at least 6 and include TCOM and UIWSOM.

Thanks a ton Faha!! Would it be worthwhile to keep taking Post-Bac classes through the summer and beyond? Or I guess a better question would be, do you think adcoms would hold my app if I indicate I am taking more classes since my stats are borderline? I've done the math and it ends up adding a few 100th of a point to my GPA, assuming the 4.0 train continues.

Taking more courses will not help your chances since the adcoms will not see the grades until later in the application cycle. Apply broadly to DO schools in addition to the MD schools.

Having gone through TMDSAS this past cycle, I agree with Faha that you will likely get aprox 3-5 IIs if not more from TX schools with your stats...

But as an ORM, I suggest you add more clinical volunteering hours to at least triple digits...

Thanks for the input! You and Faha are definitely lowering my anxiety already. With regards to the clinical volunteering, do you think that would still be warranted even with my scribing exposure and shadowing?

If you think about it, the scribing and shadowing are essentially the same thing. One is "active" while the other is passive. Since you have enough shadowing hours already, stop it if you are still doing it, and replace it with more clinical volunteering hours. Again, as an ORM, you will need a bit more of those hours. If you can get it over 100 that would be safer and 150+ would even be better. Just my $0.02
