Are there any unique extracurriculars or things I can do while in high school to make my application stand out?

Why not tell us a little about you first so we can fill in gaps rather than just giving you a bunch of random recommendations, some of which you may well have already done/be doing?

Ok so I have a solid GPA (4.6 somehow) but not a lot of science experience aside from 1 research internship. Most of my ECs are more poli sci focused since I do a lot of activism in the juvenile justice area. For example, I founded a nonprofit that's been recognized in the media and by a lot of prominent organizations for our work. I am URM so maybe that's a hook? One thing I am doing is applying for science fair so hopefully that works out. Anything more that I can do to boost my app? My biggest worry is that most of the stuff I do is too humanities-focused.

You need to shadow physicians. Humanities is fine, but you're lacking any experience that suggests you understand what physicians do and what the job is like or what they do in a given field. Never stop what interests you. Reach out to your local hospital/clinic or even your own doctor(s) and see if you can shadow them.

When I advise high school students, I would urge students to take rigorous science and math classes, do a lot of community service, and work as a volunteer in a clinic if you can. Patient transport or something where one helps others take care of patients. Office staff is fine. Shadowing physicians would also be great but there may be limits due to age or legal constraints.
