Hey, I am a sophomore, about to be a junior, in college. I was wondering if it is better to pursue an internship with a professor (research...biochemistry related or lab work), or should I volunteer at my local hospital (at the pharmacy area). I have heard (mainly through this site) that shadowing a pharmacist looks good, but I also heard that internships can boost a resume significantly. Any opinions?

I'd take the pharmacy experience. You'll be equipped to answer questions like: "Why pharmacy instead of medicine" and "Take me through the day of a pharmacist" in an interview and it shows a dedication to the profession beyond posturing.
 
I agree with owlegrad, do both.

I know people who take classes and work in the labs during the week, then work as a tech on the weekends.

Shadowing/volunteering is great because most of the time you schedule your own hours. If not, find a hospital/pharmacy that will allow you to do so. That way, if you need to spend extra time in the lab, you can, without consequence.
