We have this thread every year, and everybody has a different opinion. You can probably guess the arguments for each. Personally, I think you should just interview when you want. I preferred interviewing early to get them out of the way. If you interview later in the year though, they tend to think you are pretty serious about the program otherwise you wouldn't have come all the way for the interview. If you interview early they can't tell if you really like the program, you're "practicing," or you just haven't seen the programs you really like yet...Then again if you interview early you can make a good impression that sticks in their mind and everyone else will be compared (unfavorably, of course ) to you.
And if you interview late, you're tired, they're tired... Bottomline: it should be the least of your concerns when picking a date out of the range of dates that a program will give you. You have more important things to figure out, like how to do this cheaply.
