anyone have ideas on what type of practice I could do for the writing sample portion? I was planning on just looking for a topic online and spending 30min to type a quick essay and see what improvements I need.

Um do you have the AAMC practise exam ?
you could start with their essays to practise...
unless you dont want use them up then you could pick up random topics such as War, Technology...
