What do you consider your must have things in a contract? Student loan repayment? Sign on? Etc.

Ability to leave and tail.....

The knowledge that you can walk solves a lot of problems

Agreed. By ability to leave, I would specify that as a) minimal restrictive covenant and b) minimal time required to give your notice.
