I just looked at Section 5 of the AMCAS directions and it states that work/activities need to be described in 700 characters.
Does this include spaces?
This feels like such limited room!!!

Yes, it includes spaces. It's not that limited, you should be able to provide concise descriptions that aren't overly wordy.
