While looking back and trying to find what was the most challenging thing I had to overcome, it'd be my shyness. However, I was never officially diagnosed, and I have heard that mental conditions are looked upon negatively in med applications, so should I use another example? Thanks in advance.

Most shyness isn't due to a diagnosable mental condition. But it sometimes is severe enough to be diagnosed as Social Anxiety Disorder or Social Phobia. If you want to discuss any of these, don't do it unless you've overcome the problem. For sure don't let it become evident at interviews.

Yeah I thought it could be social phobia, but at this point it's completely or 99% gone pretty much, so it won't be a problem at interviews. My issue is that it is legitimately the hardest thing that I worked on in my life, everything else pales in comparison (I do recognize that I am privileged in that regard), and I want to write a strong essay.

Would you say it's too risky and just try to find something else?

No, I think it could be a very good essay. Go for it!
