Stupid question, but I have to ask as I'm not way too familiar with AMCAS: Is the essay that we submit on this AMCAS application the only essay we will ever submit to any of the schools?

Also, I've taken the MCAT once but I'm doing it again in September. Where in my AMCAS application can I mention this and that I am willing to have schools to consider my second MCAT score?
