Does the AMCAS count my community college GPA while counting my final GPA as i took 40 credits at a community college and the rest in a 4 year university? Also if I'm done with undergraduate biology degree, can I still take undergraduate courses that will be considered to calculate my undergraduate GPA by the AMCAS or will the AMCAS just count the courses that you have taken until you finished your undergraduate degree? the reason I want to take more undergraduate courses is to boost my GPA.

Yes, all CC courses including the ones you take after graduating will be a part of your undergrad GPA. The ones taken after you graduate will be considered post-bac courses but will still be calculated into your u-grad gpa.
