Any schools that don't stress shadowing/volunteering that much?

hmmm, i think pretty much every school likes to see a decent amount of shadowing and volunteering because they think that shadowing can help make sure you know what you're getting into and volunteering so you care about others and want to give back to the community. research, on the other hand, can be totally unrelated to dentistry =).
