Can doing research work with an assistant professor at a medical school be a shoe in for that med school? Do they have any influence on an admissions board?

No.

Their letter of recommendation might hold more weight, though. If they are a member of the admissions committee they might be able to vouch for you and their input might be considered more strongly than usual, but you still have to be just as qualified for that school.
