I just received an acceptance letter from ATSU after getting off the waitlist. However, this is the only school I was missing 1 developmental psychology class for... The program starts in the Summer and I don't know how I'm going to get that class in mid way through the spring term. Any insight or suggestions on what I should or shouldn't do?

A lot of community colleges or even universities have terms that are shorter like 4-10 weeks and start halfway through the semester! At ASU they were called A sessions and B sessions
