I made a mistake last year by only applying to TWU, I was denied acceptance (it seems they only look at GPA, as they don't even have an interview process).
This year I decided to look at different states instead.

Major: Kinesiology; emphasis in Exercise Physiology.
Overall GPA: 3.37
Last 60hours: 3.5_
Pre-Req GPA: Not sure as it differs from school to school. (3.6ish) I would assume for most pre-req.
Volunteer hours: 100 hours shadowing an OT in a Nursing home.
Over 300 hours shadowing an OT in out patient
AmeriCorp: Over 1700 hours with AmeriCorp conducting community outreach within the San Antonio area; with the intent of lessening the disparities in healthcare services within the lower-income sectors of the community.
Partnered with San Antonio Housing Authorities(S.A.H.A) to administer sensory motor exercise activities with the geriatric and disabled population.
Educated the lower-income sectors of the community on the medical services and resources available to them on a sliding-fee scale.
Not taking the GREs

Yes, I think your AmeriCorp experience will def help, esp because it's related to healthcare and social justice. For schools that interview, it gives you a talking point and shows you're educated about healthcare system.
Your other stats look fine to me. If you could take the GRE, that would open up more schools to apply to (since you said you limited yourself too much last cycle).
It might be to your advantage to apply broadly and to schools that look at last 60 gpa, since that is higher.
If you were to add another shadowing experience, pick something different: school-based OT, for example. You have a lot of hours, but not across different settings, which would add breadth to your application. Make sure your LOR's and essay are strong. Good luck!
