Im applying this cycle but have a lower gpa. My science gpa is around 3.1 and cum 3.4. I had a bad freshman year due to passing of a sibling but i was able to have a high upward trend through my sophomore to junior year (3.63 cum and sci). I do a lot of dental volunteer work and have very good extracurricular activities. What are my chances like and will they consider the circumstances experienced through my freshman year and look at my trend? also got 20 on my dat.

The upward trend will help you, but dental admissions is really competitive and unfortunately a 3.1s GPA + 20DAT doesn't help differentiate you from the thousands of other applicants. Admissions is getting more and more competitive each year as well.

It's good that you have a lot of volunteer work + ECs, but so do a ton of other people.

Apply widely, if you don't get in then continue to work on getting that GPA + DAT up.
