Class does not start for two weeks and classmates are going tubing this week. Life is good.

I hate anatomy. So much memorization.

Luckily I already know a ton.

Another bright side is I can be a chef if medicine doesn't work out. Just made homemade red sauce (okay, more like orange sauce) from scratch and kind of made up my own recipe. Oh my gosh, it is delicious!

You know food is legit if it's described with colors. I usually pair a nice red sauce with some well aged purple drink.

But seriously, the sauce was the best thing I have ever had. Totally fresh, without preservatives or high sodium levels. I have been trying to get rid of all processed foods, even the canned stuff, and everything just tastes a lot better now. Canned sauce was one of the last things I used but I now can make it myself.

Knowing how I am when I wake up on school mornings, I am trying to narrow things so I maybe just have a few standard breakfasts that I make & always have ingredients for.

#1 is oatmeal with some nuts and dried berries (currently sliced almonds & craisins because omg those are amazing)

#2 is a couple eggs and something involving greens. collards + breakfast sausage is a pretty great combo.

#3, if I'm not that hungry or in an epic hurry...throw a piece of fruit in my bag and go. Maybe I should start buying individual-size yogurts again.

Other awesome simple breakfast thoughts? I am trying to get away from my habit of throwing eggs on toast every morning since that is probably not the healthiest thing. My roommates make smoothies a lot but I don't want to clean the blender before going out the door to class.

Yogurt and granola is another good thing. Just buy a large container of yogurt so it lasts a week.
 
I just eat breakfast at home. Lunch and dinner are at the hospital for me! Haha its actually pretty good too.

Now that I look, we don't really have that many 8:30 classes this term, so I guess I don't have to make breakfast as fast as possible most days.

1) Slice up some tomatoes, throw them into a pot and cover them on medium high for about 5 minutes, then uncover to concentrate for another 5 minutes. Take some toasted pita bread, and dip. Salt and pepper to taste, of course. Surprisingly delicious.

2) Chop up some potatoes, toss them in a covered pot with a splash of water on medium high until they are soft. Then crack 1-2 eggs into it, mix well until eggs are cooked, salt/pepper, serve. BBQ sauce and bread pairs awesomely.

3) Pita bread, cucumber slices, feta cheese sandwich. So damn good.

4) Couple eggs into a pan on a low heat, mix vigorously until semi congealed. Toss in chopped chives/salt/pepper, serve on bread with olive oil.

5) Dice tomatoes, add ideally fresh minced garlic, but powders good enough, same with basil, apply mixture generously to baguette slices with olive oil.

6) Hardboil egg or two, put in toasted pita with a bit of mayo.

I'm a creature of habit and I don't need much variety in my diet. I make all of my meals on Sunday and refrigerate/freeze them.

Breakfast is a delicious chicken scramble (look up p90x recipe). Just cook and put in container in freezer. 3 minutes in the microwave and i am good to go. Sometimes I'll do crunchy peanut butter on a bagel, but I limit my bread so it's not often.

Lunch is always some type of sandwich. I could eat a turkey and Swiss cheese on 12 grain bread for the rest of my life. Ha. I also do tuna, egg salad, or chicken. I have portion containers for lunch so with my sandwich I have a serving of Terra chips (dehydrated beets and sweet potato) and a sliced apple.

Dinner is variable and ranges from stir fry to meal replacement shakes.

Every bit of this gets portioned and stored so I don't have to prepare any meals all week. Just grab and go. The sad thing is that I used to be a pretty good cook... I did a year of culinary arts and used to enjoy just throwing new dishes together. Just don't have the time now.

Greek yogurt/oats with some honey and almonds. 😍
 
School has posted practicals from previous years... So definitely not a walk in the park but not horrible either. I think I fared okay considering we haven't even gotten all the way through dissecting for the first practical yet.

I feel MS2 will be a cruise for you
 
Only 7 1/2 more weeks of block one! And then 9 more blocks. And then step 1. And then a year of working 80 hours a week (my school decided we need to work resident hours for all of year 3). And then some sub-i's, interviews, and graduation. With both parts of step 2 somewhere in there. We're basically almost done guys.
