You would not need to complete an Associates degree. You'd already have a bachelors. Just take the necessary classes. If you need to become a degree candidate to get registration priority, that's fine, but no med school will care if you complete all the requirements to qualify for an associates degree, or not.

It depends on your GPA situation and where you're aiming to apply (MD vs DO). If you have a low undergrad GPA it would be more important for you to prove your academic prowess by eventually taking more difficult coursework at a 4-year school, including multiple upper-level Bio and Chem (particularly Biochem). If your undergrad GPA is high, you could take a greater percentage of your postbac classes at the CC and get by, assuming there is sufficient course rigor at that institution for you to do well on the MCAT.
