When is the deadline to pick your official podiatry school? The deadline for CSPM is May 24th to save your spot but I still have interviews coming up, what happens if I don't give my deposit by then?

At this point the deadline to put a deposit is around 2 weeks after acceptance. You can ask them if they can extend it- usually they do.
