If I don't pay the deposit because I can't go to that particular pharmacy school anymore, should I email them and let them know out of courtesy or just leave it?

Best to email them to let them know. Common courtesy, plus keeps a paper trail in the (extremely unlikely) event that they claim you enrolled and didn’t pay whatever fee or deposit.

You should definitely email them to notify them of your intent to withdraw. I heard it’s possible they could report you to other schools if you’re not a professional and timely applicant.
