I began my college education in the fall of 2017 but I am ending it during the summer of 2021. Would this be considered taking more than four years to graduate?

No, unless the academic year begins in the summer instead of the fall. Personally, I think the summer is the end of the current year rather than the beginning of the next, although I realize AMCAS disagrees. Either way, schools that ask this question are asking about more than a single stray summer session.
