So I initially was planning to apply to medical school this year but recently decided that I want to go to graduate school first and then apply to medical school. However, I have not updated my letter writers yet about the change of events. I am thinking of telling them my future plans in my thank you note. However, since most of them gave me their office address, I am hesitant of writing a written thank you card and was just thinking of sending electronic starbucks card or something. I am conflicted as to which option to choose since some say its the age of the internet and to go with the electronic thank you card and some say to go with the hand written card ( I fear the card and gift card may get lost and never reach them). I just wanted to know everyone's opinions.

If you already sent them a handwritten thank you note for writing your letters, then I think either way would be appropriate.
