I am currently going back to school at the age of 24 to take my science pre-reqs. I have a considerable amount of shadowing experience in orthopedic surgery. I have also had some shadowing experience in pediatrics, child psychology, and general practice but not near as much as the orthopedic surgery. I also have experience interning at a large academic university medical center, as well as in a smaller community health center. Obviously when I say "intern" at these places I don't mean that as in my first year out of medical school type of internship. But anyway, I was wondering what to do next? Should I shadow more? (i love shadowing) or should I do some volunteer work at a hospital to get more clinical exposure and a more diverse list of ECs?

Sounds like you have quite a bit of relevant medical exposure. In my opinion, you should have some other ECs that aren't medically related that can show a different side of you. Keep shadowing if you can but also try to squeeze in things like leadership opportunities, mentoring/coaching, work opportunities, and clubs. It is always good to show that you are balanced and have exposure in a lot of different things.
