GPA dilema

I am applying to several OT schools (OU, KU, UTSA, South Alabama, Missouri, Rush university, etc.) but my problem is that I am in my last semester of school and I am taking 2 prereqs that will boost a lower prereq gpa.

3.5 overall GPA in Nutrition, Allied Health
3.7 in my last 60 hours
I have taken a lot of harder science classes like Ochem, Biochem, Metabolism, Microbiology, etc.
Without my last two prereqs my prereq gpa is 2.77-3.17 but with A's in those two classes I'll have a 3.03-3.4 depending on the school.

So far I have 100 observation hours in 2 different settings and am currently shadowing at a third place to gain 100 more hours.

I have great LORs.

I am also fairly involved on my campus and have held great leadership positions.

My question is, I need to apply to 3 schools in September so I have a good chance (Due to rolling admission). Should I still apply and hope that they take into consideration the fact that 2 of my prereqs aren't completed. I have 5 schools on my list that are non rolling so I could wait for my completed transcripts to show my improved GPA before I apply to them.

Any advice would be appreciated! I am starting to freak out!
 
Alot of schools take a good look at the pre-req courses and even have minimum grades for those courses, such as no lower than a B in Anatomy. What pre-req courses did you not do well in? I would retake any courses you got below a B in because many of the programs I looked into would not consider a grade below a B.
 
Thanks for the response! I got a C in anatomy but I took it early in my Sophomore year. That was the only C I received. I am not applying to any schools that have a B or better prereq requirement. I just don't really want to retake the course because I am graduating in December. That's why I want to apply to schools that I have the best shot at. I do think that my personal statement will be competitive and if I get an interview anywhere I know that will make me stand out.
