I think the only reason you got just one interview is because you applied VERY late
 
I'd do a post bacc to raise that GPA (even though you could probably get in somewhere with those DAT scores..) and reapply in a couple months

Why do a second major or take courses at all? If anything, just take courses that will maintain or boost your current grades. Even then, the courses you take and grades you receive in your fifth year won't be under consideration for interviews and the like. So it's difficult to say what you really gain from it, besides keeping busy. Perhaps, invest your time in boosting other aspects of your application that may have been lacking. Contact the schools and ask if you should do more volunteering, research, extracurriculars, etc. These are legitimate things you can put in your application and the school will see them, even if they are in progress or planned. In-progress courses, on the other hand, without a grade, are difficult for schools to care much about.

OMG. Thank you cleanup! This is exactly what I am debating myself about right now. I will take your advice and contact the schools.

I have quite a lot of dental volunteering, assisting, etc. hours, but more cannot hurt. I was just thinking if I apply early this summer, and if I can get accepted, then I shouldn't be taking courses, but rather focus on other interesting things I want to do in life (i.e. fly to Homs and report news 🙂 ) But the thing is should I play safe and already plan for the third time?

I don't know if it's a good idea to fly to Syria while you wait for interview offers. Where did that idea come from?

I think maybe you should take a couple of courses that you believe will either boost/maintain your grades but also serve as an interesting way to keep busy. If the schools advise you to take any particular courses, then take that into consideration. I'm just pointing out the fallacy that doing another major or some sort of post-bac programme will increase your chances of getting an interview, since that program and its courses will barely be underway by the time you receive invitations.

For example, I had to do a fifth year because I didn't apply in my fourth year. I took a couple pre-req courses I was missing (that was it), and was accepted before my first semester was finished. I kept up my extracurricular activities and continued to volunteer in my lab. Schools knew I had already graduated and didn't expect me to be in school all the time. That would be unreasonable and presumptuous.
