Let's say when I fill out my AADSAS application, I say that I will be taking Biochem and Anatomy in Spring 2007. Now let's say that I got into a school that I really wanted to go to and they don't really require these 2 courses. Can I then not take those 2 courses or do I have to?

You should be fine changing your mind since you've already been accepted. But why step back when Biochem and Anatomy are only going to do you good for your 1st year of dental school?
 
Check with the admissions office ... some make acceptances contingent on completion of whatever coursework you listed.
