how do DO schools look at multiple mcat scores?

At the risk of eye-rolls, it's a holistic review. For MD/DO reviewers, there are only so many conclusions one can make one or more MCAT scores, I'd imagine there would be a distribution of avg, most recent, and variable weight based on the rest of a person. If you can find specifics on the schools you're applying to, great, apply accordingly. If not, if your recent score is near their median/avg, it seems you're likely somewhat safe even with multiple takes (save room for the nuances of jumps/dives in score, practice effect, some tests being too old to be considered, etc etc).
It will be school-specific.
At my school, we average scores, as this provides a more accurate assessment.
Some schools will "superscore", ie, use the top score in each category from different exams. A dishonest and wishful thinking type of approach, in my opinion.
