Studying 9th edition Exam Krackers and receiving weekly private tutoring for MCAT summer 2018
Cell Biology Major
Community College transfer to Public UC
350 Hours volunteering in ICU
ICU Volunteer coordinator for one year (non-paid)
100 Hours shadowing surgeon, pathologists, intensivists, palliative care
>1000 Hours working as caregiver for paraplegic lawyer (paid)
100 Hours taking notes for and tutoring deaf student (paid)
50 hours assisting people who use wheelchairs to play soccer (non-paid)
While attending public UC for two years, I want to continue volunteering and I would like to try doing some research.

You'll be fine. Continue doing what you're doing and do well on the MCAT and you'll likely get multiple interviews. That being said, nothing's ever a guarantee but you're in a good spot.

The only thing I could really recommend would be trying to diversify some of your experiences, so that you get a better overall picture of American healthcare (i.e. volunteering in another department besides the ICU and maybe shadowing a primary care doc instead of just specialists). Otherwise I think that you're doing very well so far, and if you add a little bit of research it will always help out (but isn't a big priority for a lot of schools). Just be sure to get your MCAT score before applications go out, so you're not applying blind, unless you are extremely confident in your ability to handle the MCAT well.

Depending what types of schools you're interested in, and how you do on the MCAT, the only remaining thing would be some research.

I meant more like the most competitive, research powerhouse medical schools vs the typical school. Really you need the MCAT score before you can start building a school list at all though.
Yes, I agree that MCAT score is important step in process. I would be grateful to attend a typical medical school in the U.S, especially California. I think UC Davis or UC San Diego would be two great schools for me; however, they are very competitive. Time will tell...

I think trying some research would help you in pursuit of CA schools, and yeah, get that good MCAT score and your app is otherwise very strong!
