I plan to take the MCAT sometime in the summer and want to use my winter break as my starting point for studying. Now I am obviously going to review the material but my question is do I still take Practice tests even if I'm not thoroughly prepared via review?

I'm going to take Orgo II, Bio II, and physics II spring semester so I don't really know half the sciences as of yet so that's why I was wondering if I would even bother doing practice tests right now or wait until I'm done with those courses.

I would wait on the practice tests. You only have 8 exams (AAMC) that really represent the MCAT, so don't waste them before you've reviewed all the sciences.
