My school offers a seminar style course in which different patients or family members of patients with different ailments appear each week to discuss their experience as patients and to be interviewed by students from the course. There is also a discussion period for the students who then have to write a blog entry about each class.

I realize this probably isn't volunteering insofar as students in the class receive credit hours but is this considered clinical experience by AMCAS/medical school admissions?

I would not consider it clinical experience, despite the opportunity to hear people speak about the experience of being a patient. It also may be seen as a less than rigorous course for academic credit. You can do better.
