When exactly do you use the respective bases?

Depends on what reaction you want to do. LDA is often used when you want to use a base that's not nucleophilic, usually in aldol condensations where LDA will remove the Hydrogen thats most accessible (instead of attacking the carbonyl). NaOH and NaEtOH are both pretty much the same in that they are hydroxide bases, but you want to use NaEtOH over NaOH for claisen condensations if the ester is OEt (so that you don't get a transesterification).
