I'm pretty sure the flow of electrons is 90% of what you need to know

Being familiar with functional groups and the general properties and patterns of reactivity are important. MCAT these days is much lighter on organic chem than it used to be. If you're going to pre-study anything make it Biochem and don't forget to practice physics.
