Why not go see this person in private to apologize? Definitely don't just send the gift certificate if the advisor has already refused it.

I don't think forcing the gift cards is the way to go.

I would just go to their office in person and offer a heartfelt apology. I'm sure their "beef" (if he/she has one) isn't with the lost dinner opportunity but rather feeling excluded.

so not only did u snub the faculty adviser by not inviting him/her to the banquet but you also insulted him/her by offering a gift card to try and make up for it. You should stop trying to make it better and come to terms with the fact that this person won't be helping you (tremendously or otherwise) down the line.
