So I am currently in a bit of a situation. I only have observation hours in 2 locations, and had had my heart set on submitting my application as soon as summer classes were over. Now I am weighing my options of submitting it later. I had an internship set up for August, which has now been pushed back to September. Would getting another observation hour/ location be more beneficial than applying earlier? Or do you think waiting 1- 1.5 months longer be fine? The rolling admissions has me stressing about this, so any input would be great!

On PTCAS, you should be able to enter "Planned Hours" and as long as you have your PT place verify it, you should be good! You can still submit now and write that you plan on completing this many hours before school starts! And if anything, they'll ask about it during your interviews and you can clarify for them
